Coffee cake recipe:
- To start, preheat your oven to 180°C (or 160°C for fan ovens). Next, generously butter two 18 cm cake pans.
- In a mixing bowl, combine the sugar and butter. Using an electric mixer, beat them together until the mixture is light and fluffy. In a separate bowl, whisk the eggs with a fork. Gradually add one tablespoon of flour at a time while continuing to mix; don’t add all the flour at once. Once the eggs are well incorporated, gently fold in the remaining flour.
- Next, dissolve the instant coffee in boiling water and add it to the mixture. Your batter is now ready!
- Pour the batter into the prepared cake pans and place them in the preheated oven for 25 to 30 minutes or until they are set and easily pull away from the sides of the pan. To check if they’re done, insert a skewer or fork into the center; if it comes out clean, your cakes are ready.
- Once baked, let them cool in their pans for about 5 minutes before transferring them to a wire rack to cool completely. They can be frozen after cooling.
- Now it’s time to prepare the cream for decorating! Begin by mixing powdered sugar and butter until you achieve a light and fluffy consistency. Then add in the dissolved coffee and mix thoroughly. Cover this mixture and place it in the freezer.
- To assemble your cake, place one of the cooled cakes on a serving plate. Spread half of the cream evenly over it, then layer with strawberry jam or any marmalade of your choice. Top with another cake layer and repeat this process.
- Finally, decorate your creation with an assortment of nuts and fruits like walnuts and strawberries.
